Sealing & trimming of the pie edges is automatic with the edges being molded into one & not just by compressing the 2 pastry surfaces. As a result there is no need for waterwashing of pastry surfaces to enhance sealing. Machines are manufactured from stainless steel with the pivot mechanism being a dual sealed bearing unit requiring no maintenance. As the process is heat free pastry does not get damaged & with a 2 part sprung die pastry can be of any varing thickness or type.
